Deviled Eggs on a Spoon

Have you ever searched for the best way to hard boil an egg?  The goal is to get the bright yellow yolk at the perfect consistency and an easy-to-peel egg.  Am I right?!  You’ve probably read about adding vinegar to the water, putting cold eggs into boiling water, adding eggs to cold water and letting them warm up to a boil with the water, cover the pot, keep it uncovered, run eggs under cold water immediately after boiling, use old eggs…the recommendations are endless.  Everyone has their own theory about how to cook the perfect hard boiled egg.  But guess what?  Sometimes you get botched hard boiled eggs.  So what do you do when life gives you botched hard boiled eggs, make deviled eggs on a spoon!

Recently I ran into a problem.  My sure-fire way of boiling eggs (put eggs in cold water, bring to a boil, cover, remove from heat and let sit for 12 minutes) let me down.  As soon as I cracked my eggs and tried to peel them, the egg whites stuck to the shell, resulting in botched hard boiled eggs.

I was planning on making deviled eggs with these and there was no way I was going to be able to use these eggs with huge divots in the egg whites!

My mom (the creative genius that she is) came up with a brilliant idea- deviled eggs on a spoon!  Here’s what we did.

Deviled Eggs on a Spoon

Carefully cut the eggs and remove the yolks, put the yolks in a bowl.

If you need to, rinse the egg whites to get all the yolks off.

Chop the egg whites into little chunks.

Make the yolk filling as you normally would for deviled eggs. (I use mayonnaise, mustard, salt and pepper)

Put the chopped up egg whites on Chinese-style soup spoons

Use a piping bag and decorating tip to pipe your yolk mixture on top of the chopped egg whites.

Sprinkle with chopped green onion or paprika

Here’s the thing, this presentation looks fancy and your guests will be so impressed by the unique display, they will have no idea you had to salvage botched hard boiled eggs!  We served these for a party and I can’t tell you how many people commented on these deviled eggs on a spoon.  The most frequent comment we received was the egg white to yolk mixture ratio was perfect.  Say what!?!?  We didn’t even think about the ratio, but honestly, this way of piping the yolk on the chopped egg whites give you a better ratio of yolk to egg whites!
