Salted Caramel Brownies

My mom is known for her salted caramel brownies.  Ever since we were kids, she would make these for special occasions.  When my brother and I were in college she would always include these in care-packages.  Our friends were huge fans of my mom’s salted caramel brownies and loved it when we would get a special delivery of them.Salted caramel Brownie recipe

Funny story- when my brother was living in London my mom would bring all of the ingredients with her to make them for him while she was visiting; since all of the ingredients were too expensive to buy in the UK!  Good thing the ingredients are not expensive in the USA!  In fact, not many ingredients go into these salted caramel brownies.  Last time I made these I only needed one of the ingredients from the store- I had all the other ingredients in my kitchen.

What you need

14 oz Chewy Caramel Pieces (one bag)

Boxed German Chocolate Cake Mix

2/3 cup Evaporated Milk (divided)

3/4 cup Butter (melted)

1 bag Semi-Sweet Chocolate Chips

1/4 teaspoon Coarse Sea Salt

How to make Salted Caramel Brownies

Grease and flour 9×13 baking pan.  Mix boxed cake mix, melted butter and 1/3 cup of evaporated milk.  Stir by hand.  Spread half the dough into the baking dish and bake 8-10 minutes at 350 degrees.  While that is baking, melt caramels with the remaining evaporated milk.  Begin by heating the caramels/evaporated milk in microwave for 30 seconds, stir and heat for another 30 seconds and stir again.  Repeat if necessary. Salted Caramel Brownie Recipe

Once the bottom layer of the brownies is done baking, top with chocolate chips and then caramel.  Flatten small amounts of remaining dough and layer on top of the caramel, the dough will not cover the top of the caramel completely.  Bake for another 15-18 minutes.  Sprinkle with sea salt.  Cool, refrigerate for 30 minutes to let caramel set.

Full disclosure

There are two really hard parts in this salted caramel brownies recipe.  The first is unwrapping the caramels.  If you are lucky enough to find caramel chips, at your grocery store, then use those.  Otherwise you will spend a decent amount of time unwrapping individual pieces of chewy caramel and you will end up with sticky hands. Salted Caramel Brownie Recipe with chew caramel pieces

The second hardest part of this recipe is waiting until the caramel is completely set before cutting into the brownies.  The cooling part is imperative.  You will end up with a complete mess (a yummy mess) if you cut into the brownies before they are completely cool and the caramel has set.

Use the sharpest knife you have to cut these brownies to get a good looking square.  The caramel will stick to your knife and the brownie crust will stick to that, if you use a super dull knife.

These salted caramel brownies are absolutely delicious.  They are a hit at parties, events and special occasions (and every college student I have ever knows has gone crazy for them)!
